Have you every noticed that most Southerners do not get a Fall like the rest of the country? The kind with beautiful leaves and Pinterest-worthy outfits in SEPTEMBER! We go through the motion of the seasons even though the weather doesn’t connect. I never really put two and two together until Chris mentioned it one year. Being from Pittsburgh, the seasons changing revolved around the weather for him. For me, it was based completely on the calendar. I’m not complaining at all! I will take flip flops at Christmas over snow any day! So even though I’m still wearing tank tops and bathing suits…bring on Fall, the decorations, and the food! The easiest way to “feel” the season change for me is with cinnamon and apples. This morning we had these easy cinnamon pancakes with awesome apple topping that I know you are going to love!

A Southerners Cinnamon and Apple Fall

About 2 hours up the road from us is an adorable apple farm where you can pick apples. There is nothing better that freshly picked fruit straight from the field. These are the best apples you will ever taste and perfect to usher in the Fall season. I was recently gifted a ton of apples from my mom and Chris’s co-worker after they both made trips. Since then, I have been making tons of delicious apple recipes and can’t wait to share them with you!

Are you ready to be blown away? These cinnamon pancakes and the apple topping contain No Processed Sugars! Only natural sugars through honey, raw maple syrup, and naturally in the apples. Furthermore, apples are full of phytonutrients and antioxidants containing vitamins A, B1, B2, and B6. The cinnamon in the pancakes is a wonderful anti-inflammatory spice that is excellent for boosting your immune system. You can also easily transition this recipe to gluten-free. Just use all-purpose gluten-free flour in place of regular flour (2 cups instead of the listed amount). This recipe is a deliciously sweet and healthy way to jump into Fall!

Easy Cinnamon Pancakes with Awesome Apple Topping

Ingredients

    Cinnamon Pancakes:
  • 1 3/4 cups all purpose flour
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 1 1/2 tsp cinnamon
  • 1 tbsp raw maple syrup
  • 1 1/4 cup milk (dairy or nut milks work)
  • 1 egg
  • 3 tbsp melted butter
  • Apple Topping:
  • 2 tbsp butter
  • 2 small or 1 large red apple
  • 1 tbsp honey
  • 2 tsp apple pie spice

Instructions

  1. Mix all pancake ingredients in a bowl dry to wet. Set aside to thicken while you make the apple topping.
  2. Place 2 tbsp of butter in a small sauce pan on simmer to melt. Meanwhile, cut your apples. Place cut apples, honey, and spices for topping in a bowl and mix.
  3. Add the apple mixture to the melted butter and simmer on medium-low for about 8-10 minutes stirring occasionally.
  4. Heat your skillet and start making your pancakes while the apples are simmering. For medium size pancakes use 2 tbsp of batter per cake.
  5. Once the pancakes are cooked, plate, add topping and additional maple syrup if desired.
